Pattani Poriyal / Green Peas Poriyal

Cooking Time : 20 mins
Serves           : 2


This is a different delicious Poriyal and is easy to make with simple ingredients. Addition of Cashewnuts gives great taste. This is a popular vegetable Poriyal in Marriage function Lunch menu. I have eaten in many marriage functions in tamil nadu. I just want to give a try in my kitchen. This goes well with Sambar, Dal Rice.



INGREDIENTS:
Green Peas        -  1 Cup
Onion                 - 1 Big Size
Green Chillies     - 4
Curry Leaves     - 1 strand
Salt                    - To Taste
Oil                     - As Required

To Grind
Cashew nuts         - 5
Grated Coconut    - 2 tbsp
Fennel Seeds        - 3/4 tsp

STEPS:
  1. Pressure cook the Green Peas with 1 1/2 cups of water for 2 whistle and keep it aside. Chop the Onions and Green Chillies. Grind the items mentioned in "To Grind" Section to a dry powder. Dont add water while grinding.
  2. In a pan, heat oil and add Curry leaves. Once the aroma comes, add Onion and green chillies. Fry Onion till it becomes light brown. 
  3. Add Green Peas, Salt and stir well. Add the ground powder. Stir well till the mixture gets mixed with the peas. If Required add little water at this stage.
  4. Now the Vegetable Poriyal is ready to Serve.

Brinjal Fry - Method 2


Cooking time : 15 mins
Serves           : 2

This Brinjal fry is one of my favourite. My husband who hate Brinjal started loving Brinjal after tasting this spicy recipe. This can be served as a best combination with Dhal rice and curd rice. This can also be taken with Sambar, Rasam.  Egg plant can be used for cooking.


INGREDIENTS:                     
Egg plant                 15 no
Onion                      1 no
Curry leaves             1 Strand
Green chillies             3 no
Turmeric powder      1/4 tsp
Red chilli powder      1/2 tsp
Cumin powder           2 tsp
Salt                           To Taste
Oil                             As required

METHOD:
  1.  Cut brinjal into length wise slices. Cut onion.
  2.  Add turmeric powder, Red chilli powder, Salt , Cumin powder to the brinjal and allow it to marinate atleast for 30 mins.
  3. In a Pan, Heat necessary oil and  fry the brinjal in low flame and keep it aside. Deep Fry is not necessary. Minimal oil can be used in this step.
  4. In a seperate pan, add 2 tsp oil and fry onion, curry leaves and wait till onion becomes golden  color. now add green chillies and the brinjal (from Step 3) and mix well.

Carrot-Beans-Potato Sidedish

Cooking time: 20 mins
Serves          : 2

Today, Since it is friday,  i had only 1 left over carrot and potato and few beans. So thought of making this healthy dish. I got this dish from my mom. This goes well with curd rice, dal rice,Chapathi.



INGREDIENTS:
Chopped Carrot,Beans,Potato - 1 cup
Onion                                    - 1
Grated Cocunut                     - 1 1/2 tbsp
Mustard Seeds                       - 1/2 tsp
Split Black gram                     - 1/2 tsp
Turmeric Powder                   - 1/4 tsp
Red chilli Powder                   - 1 tsp
Cumin powder                       - 1 tsp
Coriander powder                   - 1 tsp
Garam masala                        - 1 tsp
Cooked Dal (Optional)            - 2 tbsp
Salt                                        - To taste
Oil                                         - As Required

STEPS:

  1. In a pan, heat oil and add mustard seeds.Once it splutters, add Black gram and wait till it turns golden brown.
  2. Add Chopped Onion and fry till it turns golden brown. Add Carrot, beans, potato, salt and stir well for 2 mins. 
  3. Add Turmeric powder, Red Chilli powder, Cumin powder, Coriander powder, Garam masala and mix well.
  4. Add 1 cup of water and cook till the vegetables are cooked.
  5. At the final step, add Grated coconut and cooked dal and stir for a min and remove fromt he flame.

Brinjal Fry - Method 1

This can be served as a best combination with curd rice. this can also be taken with Dhal rice, Sambar, Rasam. Either Brinjal/ Egg plant can be used for cooking. I used Egg plant here.



INGREDIENTS:
Oil                          3 tbsp
Brinjal                     15 no
Onion                      1 no
Mustard Seeds        1/4 tsp
Black gram              1/4 tsp
Bengal gram             1/2 tsp
Curry leaves             1 Strand
Dry Red chillies          4 no
Turmeric powder      1/4 tsp
Red chilli powder      1/2 tsp
Coriander powder     1 tsp
Sambar powder         1 1/2 tsp
Salt                           To Taste



METHOD:
  1.  Cut brinjal into length wise slices. Cut onion.
  2. In a Pan, Heat oil and add mustard seeds and wait till it splutters. Then, Add Black gram nad Bengal gram. Wait till it becomes golden brown color. Now add Red hillies and curry leaves and wait till the aroma comes. 
  3. Add onion and fry till it becomes golden brown color. Add Brinjal, turmeric powder, Red chilli powder, Salt and fry for 5 mins. Dont add water.
  4. Add Coriander powder and Sambar powder and fry well till the masala gets mixed well.
