Muttai Kothu Parota (Egg Parota)

This is a famous tamilnadu recipe - Muttai kothu parota(Egg Parota). This is also popular in fast food centers.




INGREDIENTS:
Parota                                                                                                 4
Onion                                                                                                  2
Tomato                                                                                               1
Green chillies                                                                                      3
Eggs                                                                                                    2
Turmeric powder                                                                               1/4 tsp
Red chilli powder                                                                               1 tsp
Pepper powder                                                                                     1 tsp
Curry leaves                                                                                         1 strand
Coriander leaves                                                                                To Garnish
Mutton/chicken/veg chalna (without mutton/chicken pieces)                1/4 cup


METHOD:

  1. Heat oil in a kadai and season with curry leaves and green chillies. Add chopped onion and fry till it becomes golden brown color. Add chopped tomatoes, salt, turmeric powder, red chilli powder and fry till the raw smell goes.
  2. Add the shredded parota and stir well.
  3. Meanwhile, in a seperate pan, heat oil and add eggs and salt and stir for 2 mins till the egg is cooked.
  4. Add the eggs(from step 3) to the parota and stir well. Add chalna and stir well till the gravy becomes dry.
  5. Remove from the flame and garnish with coriander leaves.
Alternate for chalna:
If you dont have chalna, you can add 1 tsp garam masala powder, 1 tsp ginger garlic paste, 1 tsp curry powder.
